Our Favorite Creamy Peanut Satay Dressing
Ingredients
- 200 ml canned coconut milk
- 6 tbsp crunchy peanut butter
- 1 tsp mild curry powder
- 1/2 tsp ground cumin
- Juice of 1 lime
- 2 cloves of garlic
- 2 tbsp tamari/soy sauce
Preparation
Whizz all ingredients together in a blender.
Season with a pinch of salt and pepper if needed.
Store the dressing in the fridge for later use.
Drizzle over salads, fridge raid meals, or roasted vegetables for best results.
