Our Favorite Creamy Peanut Satay Dressing

Ingredients

  • 200 ml canned coconut milk
  • 6 tbsp crunchy peanut butter
  • 1 tsp mild curry powder
  • 1/2 tsp ground cumin
  • Juice of 1 lime
  • 2 cloves of garlic
  • 2 tbsp tamari/soy sauce

Preparation

  1. Whizz all ingredients together in a blender.

  2. Season with a pinch of salt and pepper if needed.

  3. Store the dressing in the fridge for later use.

  4. Drizzle over salads, fridge raid meals, or roasted vegetables for best results.
