Cucumber Raita with Mint and Spices

Ingredients

  • 1 cucumber
  • 100g vegan yogurt
  • 1/2 lime
  • 1 clove garlic
  • A piece of ginger (slightly larger than a garlic clove)
  • A bunch of mint (mixture of Moroccan mint, peppermint, and tarragon)
  • 2 pinches ground cumin or ground coriander

Preparation

  1. Slice the cucumber thinly, salt it, and let it drain.

  2. Meanwhile, in a bowl, mix the yogurt, lime juice, grated garlic and ginger, cumin, and chopped mint.

  3. Once the cucumber has drained, drain it and add the sauce.

  4. Season with salt and pepper, it is ready.
