Cucumber Raita with Mint and Spices

Ingredients

  • 1 cucumber
  • 100g vegetable yogurt
  • 1/2 lime
  • 1 clove garlic
  • a piece of ginger slightly larger than the garlic clove
  • a bunch of mint (mixed varieties)
  • 2 pinches of ground cumin or coriander

Preparation

  1. Slice the cucumber thinly, salt it and let it drain.

  2. Meanwhile, in a bowl, mix the yogurt, lime juice, grated garlic and ginger, cumin and chopped mint.

  3. Once the cucumber has drained, drain it and add the sauce.

  4. Season with salt and pepper, it's ready!
