Authentic Indonesian Green Chili Sambal
Ingredients
- 100g green chilies
- 2 green tomatoes
- 10 shallots
- 4 garlic cloves
- 1/2 lime
- Cooking oil as needed
- Stock powder
- Salt
- Sugar
Preparation
Wash the green chilies and tomatoes clean, then steam them along with shallots and garlic for 5 minutes.
Coarsely pound or blend the mixture without making it too fine, heat oil in a pan, fry the sambal until it darkens, then turn off the heat.
Season with salt, sugar, stock powder, and squeeze in lime juice, then check the taste.

This recipe yields a small amount suitable for 2-3 servings.
Sambal Ijo has a characteristic aroma and pairs well with Nasi Padang or fried chicken.
