Vegan Vodka Cream Sauce

Ingredients

  • A few cloves minced garlic
  • Some olive oil
  • 6-ounce can tomato paste
  • 1/4 cup vodka
  • One can coconut milk
  • Some salt
  • About one pound cooked pasta
  • Some pasta water

Preparation

  1. Cook pasta according to package directions until al dente.

  2. Saute a few cloves of minced garlic with some olive oil until fragrant.

  3. Add a 6-ounce can of tomato paste and saute until it turns a deep red color.

  4. Add 1/4 cup of vodka and let it sizzle.

  5. Add a can of coconut milk and some salt, then simmer.

  6. Add about a pound of cooked pasta and some pasta water, then stir to combine.
