Authentic Padang Beef Rendang

Ingredients

  • 1 kg beef
  • Baby potatoes (amount not specified)
  • 2 turmeric leaves
  • 1 lemongrass stalk
  • 4 kaffir lime leaves
  • 1 bay leaf
  • 1 tablespoon ambu2 (optional, may omit)
  • 100 grams finely ground chili
  • 1 kg thick coconut milk

Ground spices

  • 10 large shallots
  • 5 garlic cloves
  • Ginger (thumb-sized)
  • Young galangal (thumb-sized)
  • 1 packet rendang spice mix (contains coriander, cardamom, star anise, cloves, cinnamon, nutmeg)

Preparation

  1. Put all ingredients in one pan or wok except the meat, potatoes, and ambu2.

  2. Stir briefly until the coconut milk slightly boils, then add the meat and ambu-ambu.

  3. When the rendang starts bubbling vigorously, add the potatoes.

  4. Stir again until the rendang is oily and dark.

Tips

  1. Stir continuously to the bottom of the pan to avoid burning.
