Bizeli (Pea and Veg Stew)

Ingredients

  • 1 large white onion, chopped ⁣
  • 3 tbsp extra virgin olive oil ⁣
  • 6 potatoes, cubed ⁣
  • 4 carrots, peeled and cut into thick slices⁣
  • 1 tbsp tomato pure ⁣
  • 1kg frozen peas ⁣
  • 1 tbsp ground cinnamon ⁣
  • 1 can chopped tomatoes ⁣
  • 1 veg stock cube ⁣
  • salt ⁣

Preparation

  1. In a large casserole dish, cook the onion in the olive oil till softened

  2. Add the carrots and potatoes and cook for five more minutes ⁣

  3. Add the tomato pure and mix well ⁣

  4. Add the frozen peas, chopped tomatoes, ground cinnamon, bay leafs, veg stock and mix well ⁣

  5. Add enough water to cover all the peas and vegetables ⁣

  6. Bring to a simmer, lower the heat, cover and cook for 45 minutes stirring occasionally ⁣

  7. Uncover and cook uncovered for a further 15 minutes ⁣

  8. Season well and serve with your favourite bread⁣

  9. You can also drizzle with a little extra olive oil and a squeeze of lemon
