Bizeli (Pea and Veg Stew)
Ingredients
- 1 large white onion, chopped
- 3 tbsp extra virgin olive oil
- 6 potatoes, cubed
- 4 carrots, peeled and cut into thick slices
- 1 tbsp tomato pure
- 1kg frozen peas
- 1 tbsp ground cinnamon
- 1 can chopped tomatoes
- 1 veg stock cube
- salt
Preparation
In a large casserole dish, cook the onion in the olive oil till softened
Add the carrots and potatoes and cook for five more minutes
Add the tomato pure and mix well
Add the frozen peas, chopped tomatoes, ground cinnamon, bay leafs, veg stock and mix well
Add enough water to cover all the peas and vegetables
Bring to a simmer, lower the heat, cover and cook for 45 minutes stirring occasionally
Uncover and cook uncovered for a further 15 minutes
Season well and serve with your favourite bread
You can also drizzle with a little extra olive oil and a squeeze of lemon
