Chipotle Chicken Bean and Lentil Stew

Ingredients

  • 2 chicken breasts
  • 100g lentils
  • 400g chopped tomatoes
  • 400g kidney beans
  • 1 onion
  • 1 sweet pepper
  • a small amount of grated ginger
  • 4 tablespoons chipotle paste or sauce
  • 450ml chicken stock

Preparation

  1. Fry the onion, ginger and chicken until browned

  2. Pour in the chopped tomatoes, chipotle paste or sauce, kidney beans, and lentils, and stir

  3. Pour in the chicken stock, bring to a boil, and simmer for 20 minutes
