Hungover Day Potatoes and Lentil Dal

Ingredients

  • 3 portions potatoes or rice
  • Half a pack lentils
  • 2 tablespoons turmeric powder
  • Olive oil
  • Salt and pepper
  • 1 onion
  • 3 carrots
  • Thumb-sized piece of ginger
  • Pinch of chili
  • 2 tablespoons curry powder
  • Bunch of cilantro
  • 1 can tomatoes
  • Splash of vinegar
  • Splash of maple syrup
  • 3 limes

Preparation

  1. Cook the potatoes or rice

  2. In another pot, cook the lentils for about 15 minutes

  3. Chop the onion and ginger

  4. Fry in a pan with oil

  5. Chop the carrots into small pieces

  6. Add to the onion and fry for about 5 minutes

  7. Drain the water from the lentils

  8. Add back to the pot and add the canned tomatoes

  9. Let it simmer and add the carrot, ginger, and onion mixture

  10. Season with salt, pepper, syrup, vinegar, turmeric, and curry powder

  11. Chop the cilantro and cut limes in halves

  12. Serve the dal with lime juice, cilantro, and potatoes or rice

  13. Tip: Add a lot of fresh cilantro and lime on top for extra juiciness
