Immune-Boosting Vegetable Soup
Ingredients
- Onion
- garlic
- cauliflower rice
- carrots
- green beans
- purple cauliflower
- fennel
- lentils
- salt
- pepper
- basil
- thyme
- turmeric
- nutritional yeast
- vegetable broth
Preparation
Chop all vegetables into bite-sized pieces
In a large pot, sauté onion and garlic in a small amount of vegetable broth or water until softened
Add the remaining vegetables, lentils, salt, pepper, basil, thyme, and turmeric
Pour in the vegetable broth and bring to a boil
Reduce heat and simmer until vegetables and lentils are tender, approximately 20-30 minutes
Stir in nutritional yeast and adjust seasoning before serving
