Immune-Boosting Vegetable Soup

Ingredients

  • Onion
  • garlic
  • cauliflower rice
  • carrots
  • green beans
  • purple cauliflower
  • fennel
  • lentils
  • salt
  • pepper
  • basil
  • thyme
  • turmeric
  • nutritional yeast
  • vegetable broth

Preparation

  1. Chop all vegetables into bite-sized pieces

  2. In a large pot, sauté onion and garlic in a small amount of vegetable broth or water until softened

  3. Add the remaining vegetables, lentils, salt, pepper, basil, thyme, and turmeric

  4. Pour in the vegetable broth and bring to a boil

  5. Reduce heat and simmer until vegetables and lentils are tender, approximately 20-30 minutes

  6. Stir in nutritional yeast and adjust seasoning before serving
