Smoky Tomato Butterbean Soup/stew
Ingredients
- 1 can of cannelini beans
- 2 medium carrots
- 2 sticks of celery
- 1 red onion
- 4 cloves of garlic
- 1 tbsp tomato paste
- 7 ripe tomatoes
- 1 tsp smoked paprika
- 1 tap oregano
- a handful of kale
- 1 litre of veg stock
- 1 tsp chilli flakes
Preparation
Slice the onion into half moons & finely chop the garlic
Cut the carrot & celery into equal little chunks (about half the size of a cannelini bean)
Roughly chop the tomatoes
Heat a pan & add some oil, begin to brown the onions for about 5-8 mins & then add the celery & carrot & cook for a further 4-5 mins
Add in the garlic & tomatoes & cook for another 5 mins
Sprinkle over paprika & oregano along with the tomato paste & give a good mix about
Pour in the cannelini beans with their water & then the stock, bring to a boil & reduce heat & leave to simmer for 20 mins
Add in the kale 5 mins before serving & allow to just wilt ! mop up witth loooovely bread & enjoy !
