Smoky Tomato Butterbean Soup/stew

Ingredients

  • 1 can of cannelini beans
  • 2 medium carrots
  • 2 sticks of celery
  • 1 red onion
  • 4 cloves of garlic
  • 1 tbsp tomato paste
  • 7 ripe tomatoes
  • 1 tsp smoked paprika
  • 1 tap oregano
  • a handful of kale
  • 1 litre of veg stock
  • 1 tsp chilli flakes

Preparation

  1. Slice the onion into half moons & finely chop the garlic

  2. Cut the carrot & celery into equal little chunks (about half the size of a cannelini bean)

  3. Roughly chop the tomatoes

  4. Heat a pan & add some oil, begin to brown the onions for about 5-8 mins & then add the celery & carrot & cook for a further 4-5 mins

  5. Add in the garlic & tomatoes & cook for another 5 mins

  6. Sprinkle over paprika & oregano along with the tomato paste & give a good mix about

  7. Pour in the cannelini beans with their water & then the stock, bring to a boil & reduce heat & leave to simmer for 20 mins

  8. Add in the kale 5 mins before serving & allow to just wilt ! mop up witth loooovely bread & enjoy !
