Traditional Malaysian Beef Rendang
Ingredients
- 1 kg beef
Blended spices
- 18 shallots
- 8 garlic cloves
- 10 dried chilies
- 1 inch ginger
- 1 inch galangal
Pounded spices
- 1 tablespoon fennel seeds
- 1/2 tablespoon cumin
- 2 tablespoons black pepper
Additional
- 3 tablespoons kerisik
- a little turmeric powder
- 1 tablespoon sugar
- 1 piece palm sugar
- salt to taste
- 1 tamarind slice
- 1 star anise
- 1 cinnamon stick
- 3 cloves
- 1/2 kg coconut milk
Preparation
Blanch the beef until the water is released.
When the beef water is slightly reduced, add the blended spices, pounded spices, cinnamon stick, star anise, and cloves and cook until the beef is tender and slightly dry.
When it is dry, add the palm sugar, sugar, salt, turmeric powder, kerisik, tamarind slice, and optional seasoning, cook until slightly dry, then add the coconut milk and cook until dry to your preference.
