Crispy Baked Falafel in Waffle Maker

Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 1/2 cup parsley, chopped
  • 1/2 cup cilantro, chopped
  • 1/2 cup yellow onion, chopped
  • 3 cloves garlic
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 tablespoons lemon juice

Preparation

  1. Drain the soaked chickpeas.

  2. Put everything into a food processor and process until combined. You may need to scrape the sides once or twice.

  3. Heat waffle maker and spray with oil.

  4. Make a mound in the center with 1 cup of the falafel mix.

  5. Close waffle maker and cook for 10-12 minutes.

  6. To get it even crisper, put it into an air fryer at 360°F for 5 minutes.

  7. Eat it like a waffle with a drizzle of cashew tzatziki or cut it into strips and eat in a tortilla or pita.
