Red Pepper Hummus Wraps with Kale Couscous Salad

Ingredients

  • 2 wraps of choice
  • A few tablespoons red pepper hummus (homemade or store bought)
  • 2 large handfuls kale (cleaned and chopped)
  • 1/4 cup whole wheat couscous
  • 1/2 cup hot water
  • Juice of half a lemon
  • 1 tablespoon tahini
  • Salt and pepper to taste
  • 1/2 red bell pepper
  • Romaine lettuce
  • Olives

Preparation

  1. Add couscous to a bowl, cover it with hot water and let it sit for about 5 minutes before fluffing it up with a fork

  2. In the meantime add kale to a bowl together with lemon juice and tahini and massage it with your hands until it becomes tender before adding the couscous to it

  3. Spread a generous amount of hummus onto the wraps and layer them with romaine lettuce, bell pepper slices, olives and the couscous kale salad

  4. Roll up and enjoy

Tips

  1. This step is a bit messy but it is totally worth it
