Vegan Buffalo Cauliflower Wraps

Ingredients

  • 1 head of cauliflower
  • 1/2 cup flour
  • 1/2 cup plant-based milk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 cup buffalo sauce
  • 2 tortillas
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup shredded lettuce
  • 1/4 cup vegan ranch dressing

Preparation

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper

  2. In a bowl, mix flour, plant-based milk, garlic powder, and paprika to create a batter

  3. Cut the cauliflower into bite-sized florets and coat them evenly in the batter

  4. Place the coated cauliflower on the baking sheet and bake for 20-25 minutes until golden and crispy

  5. Remove from oven and toss the cauliflower in buffalo sauce until well coated

  6. Warm the tortillas in a dry skillet or microwave

  7. Assemble the wraps by adding buffalo cauliflower, diced tomatoes, diced red onion, shredded lettuce, and vegan ranch dressing to each tortilla

  8. Roll up the tortillas and serve immediately
