Sweet and Spicy Tofu Stir-Fry

Ingredients

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 1 package extra firm tofu, pressed and cubed
  • 2 cups chopped veggies, optional
  • 2 tbsp sesame oil

Sauce

  • 3 tbsp gochujang
  • 3 tbsp hot water
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sriracha

Preparation

  1. Saute the onion and garlic in a large skillet for 4-5 minutes until fragrant.

  2. Add the carrots and let them cook.

  3. Meanwhile, whisk together all the sauce ingredients in a bowl.

  4. Add the tofu and veggies to the pan.

  5. Pour in the sauce.

  6. Stir to incorporate and cook until the veggies are tender.

  7. Toss with sesame oil and serve warm.
