Vegan Mozzarella Cheese
Ingredients
- 50g cashews⠀
- 1 tbsp psyllium husks (flohsamenschalen)⠀
- 200ml water or soy milk
- 1 tbsp nutritional yeast⠀
- about 1/8 tsp of salt⠀
- pinch of garlic powder
Preparation
Soak cashews in hot water and cover the bowl with a lid
Let it sit for 2 hours
Add the psyllium husks to a small jar and fill in 200ml of water, let it sit for 2 hours as well
Drain cashews
Mix everything in a food processor or high speed blender until smooth
Brush a small bowl with a bit of oil
Fill in the mozzarella mass and put it in the fridge for about an hour
Serve with ripe organic tomatoes, fresh basil & balsamic vinegar
