Vegan Mozzarella Cheese

Ingredients

  • 50g cashews⠀
  • 1 tbsp psyllium husks (flohsamenschalen)⠀
  • 200ml water or soy milk
  • 1 tbsp nutritional yeast⠀
  • about 1/8 tsp of salt⠀
  • pinch of garlic powder

Preparation

  1. Soak cashews in hot water and cover the bowl with a lid

  2. Let it sit for 2 hours

  3. Add the psyllium husks to a small jar and fill in 200ml of water, let it sit for 2 hours as well

  4. Drain cashews

  5. Mix everything in a food processor or high speed blender until smooth

  6. Brush a small bowl with a bit of oil

  7. Fill in the mozzarella mass and put it in the fridge for about an hour

  8. Serve with ripe organic tomatoes, fresh basil & balsamic vinegar
