Easy Strawberry Pinwheels Recipe for Eid

Ingredients

  • 2 packs ready-rolled puff pastry
  • 400g strawberries
  • 200g soft cheese
  • 4 tbsp icing sugar + extra for dusting
  • A few drops of vanilla flavouring (optional)
  • Strawberry jam/conserve (as needed)
  • Egg/milk for eggwashing

Preparation

  1. Slice the strawberries in half. Mix the soft cheese with 4 tbsp of icing sugar and add a few drops of vanilla flavouring.

  2. Cut each sheet of ready-rolled puff pastry into 12 squares. Use a knife or pizza cutter to cut diagonally into the corners of each square, avoiding cutting too far into the middle. Gently lift alternating corners and fold them into the middle to form a pinwheel shape.

  3. Lightly brush the pinwheels with eggwash. Add 1 tsp of sweetened soft cheese and 1 tsp of jam to the center of each pinwheel. Place a sliced strawberry on top.

  4. Bake in the oven at 190°C (375°F), gas mark 5 - 6, for 15 - 20 minutes or until the pinwheels are golden and puffy.

  5. Allow the pinwheels to cool completely before dusting them with more icing sugar.

  6. Serve the pinwheels as they are with tea, or warm them slightly and serve with clotted cream.
