Hearty Vegetarian Breakfast Pie

Ingredients

Base pastry

  • 90g plain flour
  • Sea salt
  • White pepper
  • 20g trex
  • 10g Lurpak butter
  • Cold water, about 2 tablespoons

Filling

  • Pre-cooked Quorn sausage patty
  • Morrisons baked beans
  • Pre-cooked bacon lardons

Top pastry

  • Jus Rol puff pastry
  • Beaten egg for brushing

Preparation

  1. Rub the trex and butter into the flour with sea salt and white pepper until it resembles a crumb texture.

  2. Add cold water gradually to combine into a dough and refrigerate.

  3. Assemble the pie by using the pre-cooked filling ingredients: Quorn sausage patty, baked beans, and bacon lardons.

  4. Line a pie dish with the refrigerated pastry dough, add the filling, and top with puff pastry.

  5. Seal the edges and brush the top with beaten egg.

  6. Bake at 190°C for 25 minutes, then cover with foil and bake for another 10 minutes.

Serving suggestions

  1. Serve on a bed of spinach topped with a fried egg.
