Hearty Vegetarian Breakfast Pie
Ingredients
Base pastry
- 90g plain flour
- Sea salt
- White pepper
- 20g trex
- 10g Lurpak butter
- Cold water, about 2 tablespoons
Filling
- Pre-cooked Quorn sausage patty
- Morrisons baked beans
- Pre-cooked bacon lardons
Top pastry
- Jus Rol puff pastry
- Beaten egg for brushing
Preparation
Rub the trex and butter into the flour with sea salt and white pepper until it resembles a crumb texture.
Add cold water gradually to combine into a dough and refrigerate.
Assemble the pie by using the pre-cooked filling ingredients: Quorn sausage patty, baked beans, and bacon lardons.
Line a pie dish with the refrigerated pastry dough, add the filling, and top with puff pastry.
Seal the edges and brush the top with beaten egg.
Bake at 190°C for 25 minutes, then cover with foil and bake for another 10 minutes.
Serving suggestions
Serve on a bed of spinach topped with a fried egg.
