Our Beets Meat Raw Ravioli

Ingredients

  • 1 beet root thinly sliced
  • for the hummus
  • 1 1/2 cup of chickpeas
  • 2 tbs of tahini
  • 1 tbs of lemon juice
  • 3 cloves of garlic
  • 1/2 tsp of olive oil
  • 1/4 tsp of cumin
  • 1/8 tsp of black pepper
  • 3/8 tsp of pink himalayan salt
  • 1/2 tsp of chopped curly parsley
  • 1/2 tsp of chopped chives

Preparation

  1. Combine all ingredients for hummus excluding parsley and chives into a blender or food processor

  2. Blend until smooth

  3. Next add herbs and give a few pulses and set aside

  4. Layout beet slices and scoop a spoonful of hummus onto one side of each slice

  5. Gently fold slices and set onto dish

  6. Top with sprouts(we used radish) and enjoy ???? #threebunnies
