Ravioli W/creamy Mushroom Sauce

Ingredients

  • 400 g flour⠀
  • 1 tsp salt⠀
  • 1/2 tsp turmeric powder⠀
  • 1 1/2 cup cold water —⠀
  • 1 tbsp olive oil⠀
  • 1 garlic clove (minced)⠀
  • 400 g mushrooms (sliced)⠀
  • 3/4 cup white wine⠀
  • 1 tbsp flour⠀
  • 1 cup soy or oat cream⠀
  • 2 tbsp parsley (minced)⠀

Preparation

  1. Place flour in a food processor, add in salt, turmeric powder and water and process until the mixture sticks together (depending on the flour you might have to add more water or flour)

  2. Once the mixture forms a ball cover it and let it rest in the fridge for 1 hour

  3. For the filling, heat the oil in a saucepan, add the garlic and sauté for 2 minutes

  4. Add in the mushrooms and brown for 5-20 minutes

  5. Pour in the wine and and simmer until it has completely evaporated

  6. Add in flour, cream and parsley and simmer until the mixture gets rather solid

  7. Adjust salt and pepper and set aside

  8. Using a pasta machine roll out the dough until it’s about 2-3 millimeters thick

  9. Press a glass into the ravioli sheet and set the ravioli circles over a floured surface

  10. Each raviolo is made of 2 circles; put 1 tsp of filling in the middle of a circle, moisten with your finger the edges of the dough and cover with another circle

  11. Press the edges of the raviolo with a fork so that it wont open while boiling

  12. Boil the ravioli for 5 minutes and serve with a dash of olive oil and macadamia cheeze

  13. Enjoy!
