Spinach Dumplings

Ingredients

  • 250gms plain flour (a bit more for dusting)
  • 125gms water
  • 50gms chopped fresh (works better) or frozen spinach (optional or use 25mls extra water)
  • 1/4 teaspoon salt

Preparation

  1. Defrost spinach in the microwave, mix with the water, bring to the boil for a few minutes so the spinach is fully cooked & blend to a puree ?Add 150mls of the boiling water mix to the flour and salt & mix well. ?Get your hands in once it’s cooled down a bit & form a dough. ?Kneed well (one for the kids ?). ?Set aside for 1 hour or freeze for later use

  2. After an hour make about 30 small balls from the dough. Roll each ball flat to a a circle about 7cm diameter, fill with choice of filling and pinch pleat press to seal!

  3. Once filled steam to cook or pan fry & steam like gyoza

  4. Filling suggestions: spinach, any veggies, frozen veggies eg sweetcorn, peas, edamame, broccoli prawns, chicken anything you have in the cupboard
