Chia-Avocado
Ingredients
- chia pudding
- 2 cups of plant milk @alpro
- 1/2 cup chia seeds @bobsredmill @earthfoodsme
- 1/2 tsp vanilla extract
- 1/4 cup maple syrup @waitroseuae
- avocado layer
- few drops of coconut water (chilled)
- 2 ripe avocados (pitted and peeled)
- 2 tbsp. agave nectar
- 1 tsp. fresh lime juice
- homemade granola mix for garnishing (please see recipe in my previous post)
Preparation
Chia seed pudding:
Chuck in everything except the chia seeds in the blender
Pulse it until the mixture turns smooth
Add the chia seeds
Mix well
Shift the mixture into a glass container
Let the gel set for 4 hours (or overnight)
Pro tip: remember to stir the mixture a few times during the first hour
Doing this ensures that the gel sets evenly and retains its creaminess
Add all the ingredients of the avocado layer in a blender
Pulse the mixture a few times till you get a nice creamy layer
What else? assemble the parfait by pouring the avocado layer first then the chia pudding
Add another layer if you’ve got room
Then top the parfait with granola
Enjoy?!
