Easy Vegan Rice Pudding Dessert

Ingredients

  • 1 Liter oat milk or any other vegan milk
  • 250g short grain white rice
  • 40-60g coconut sugar (adjust to your sweetness level)
  • 1 teaspoon vanilla extract
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt, or to taste

Preparation

  1. Bring the oat milk and rice to a boil.

  2. Add salt, vanilla extract, coconut sugar, and nutmeg to the pot.

  3. Stir the ingredients together and let them simmer.

  4. Lower the heat and allow the mixture to cook at a low simmer, stirring often and scraping the bottom to prevent sticking, for about 20 minutes or until desired thickness is reached.

  5. Top the rice pudding with ground cinnamon and optional toppings like apple sauce.
