Healthy Mango Black Goji Parfaits
Ingredients
- 1 cup almond milk
- 4 tablespoons chia seeds
- 1 tablespoon maple syrup
- 1 tablespoon goji powder
- 1 mango
- 250 ml yogurt
- 1/2 lemon juice
- a bit of cardamom
- gluten-free oats
- buckwheat
- sunflower seeds
- hazelnuts
- cocoa powder
- chocolate chips
- coconut oil
- fresh mango
- lavender
Preparation
Prepare chia pudding by mixing 1 cup almond milk, 4 tablespoons chia seeds, 1 tablespoon maple syrup, and 1 tablespoon goji powder; let it set until thickened.
Blend 1 mango with 250 ml yogurt, 1/2 lemon juice, and a bit of cardamom to create mango lassi.
Make chocolate granola using gluten-free oats, buckwheat, sunflower seeds, hazelnuts, cocoa powder, chocolate chips, and coconut oil; bake or mix as needed.
Prepare fresh mango by cubing it and adding a touch of lavender.
Assemble the parfait in layers: start with chia pudding, add mango lassi, then chocolate granola, and top with the fresh mango mixture.
