Healthy Mango Black Goji Parfaits

Ingredients

  • 1 cup almond milk
  • 4 tablespoons chia seeds
  • 1 tablespoon maple syrup
  • 1 tablespoon goji powder
  • 1 mango
  • 250 ml yogurt
  • 1/2 lemon juice
  • a bit of cardamom
  • gluten-free oats
  • buckwheat
  • sunflower seeds
  • hazelnuts
  • cocoa powder
  • chocolate chips
  • coconut oil
  • fresh mango
  • lavender

Preparation

  1. Prepare chia pudding by mixing 1 cup almond milk, 4 tablespoons chia seeds, 1 tablespoon maple syrup, and 1 tablespoon goji powder; let it set until thickened.

  2. Blend 1 mango with 250 ml yogurt, 1/2 lemon juice, and a bit of cardamom to create mango lassi.

  3. Make chocolate granola using gluten-free oats, buckwheat, sunflower seeds, hazelnuts, cocoa powder, chocolate chips, and coconut oil; bake or mix as needed.

  4. Prepare fresh mango by cubing it and adding a touch of lavender.

  5. Assemble the parfait in layers: start with chia pudding, add mango lassi, then chocolate granola, and top with the fresh mango mixture.
