Key Lime Chia Pudding Parfaits

Ingredients

  • For the CHIA PUDDING
  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk
  • 1/4 cup avocado, mash
  • 1/4 cup fresh lime juice
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 - 1 tbsp SpiraVeg fresh spirulina
  • For the CRUST
  • 1/4 cup rolled oats
  • 2 tbsp almonds
  • 2 tbsp unsweetened applesauce
  • Pinch of salt

Preparation

  1. In a medium bowl, add chia seeds, almond milk, avocado, lime juice, maple syrup, vanilla and spirulina. Stir well until all ingredients are combined. Let the mixture sit for at least 2 hours, or overnight if possible

  2. When ready to serve, add oats, almonds, applesauce, and salt to a food processor or blender. Process until a soft dough forms. Press half the dough into each base of two jars or cups

  3. Divide the chia pudding evenly between the two jars or cups. Top with your choice of healthy toppings, like granola and lime zest
