Tasty Caribbean Vegan Bread Pudding
Ingredients
- 3 tsp vanilla essence
- 3 tbsp cornstarch
- 1/2 tsp mixed spice
- 1/2 tsp nutmeg powder
- 620g sourdough bread, crust removed and crushed
- 1/3 cup sultanas
- 2 tbsp red wine
- 1/2 cup brown sugar
- 2 cups vegan milk
- 1/4 cup vegan butter
Preparation
Combine bread and milk, allow bread to become softened until it is a bit soggy, then add butter, sugar, cornstarch, and all spices with vanilla and sultanas, finally add red wine
With all ingredients combined, use a wooden spoon to mix until there’s no lumpy bread
Grease baking dish, layer bread mixture in a 12-inch dish, and preheat oven to 180°C/350°F
Leave bread pudding to stand for 15 minutes so that bread can be fully soaked
Sprinkle with a bit more sugar on top and bake pudding for 40 minutes or until set
Serve pudding warm or cooled, or with homemade or vegan custard
