Tasty Caribbean Vegan Bread Pudding

Ingredients

  • 3 tsp vanilla essence
  • 3 tbsp cornstarch
  • 1/2 tsp mixed spice
  • 1/2 tsp nutmeg powder
  • 620g sourdough bread, crust removed and crushed
  • 1/3 cup sultanas
  • 2 tbsp red wine
  • 1/2 cup brown sugar
  • 2 cups vegan milk
  • 1/4 cup vegan butter

Preparation

  1. Combine bread and milk, allow bread to become softened until it is a bit soggy, then add butter, sugar, cornstarch, and all spices with vanilla and sultanas, finally add red wine

  2. With all ingredients combined, use a wooden spoon to mix until there’s no lumpy bread

  3. Grease baking dish, layer bread mixture in a 12-inch dish, and preheat oven to 180°C/350°F

  4. Leave bread pudding to stand for 15 minutes so that bread can be fully soaked

  5. Sprinkle with a bit more sugar on top and bake pudding for 40 minutes or until set

  6. Serve pudding warm or cooled, or with homemade or vegan custard
