Delicious Lunch/ Dinner Inspiration

Ingredients

  • 1 tbsp olive oil ?1 tbsp butter ?1 onion ?2 cloves garlic ?2 cups arborio rice ?5 cups hot veg stock ?1 cup wilted
  • blitzed baby spinach. (You’ll need about 4 cups of raw spinach to get one cup) ?1/4 cup grated Parmesan ?2 tbsp parsley ?Optional: toasted pine nuts and shaved Parmesan

Preparation

  1. Wilt your spinach by putting in in a colander and pouring boiling kettle water over it

  2. Once wilted & cooled squeeze out any excess water and blitz

  3. I use a nutri bullet and it works great

  4. Set aside

  5. Put the butter and olive oil in a pan over a medium heat

  6. Add the onions and garlic and cook for about 10 minutes till soft and translucent, not browned

  7. Add the rice and cook for a couple of minutes stirring continuously till the rice is coated

  8. Add one cup of veg stock to the rice and stir till it’s all absorbed

  9. Repeat with the rest of the stock, one cup at a time till you’ve used all the stock

  10. Take off the heat and add the spinach, Parmesan and parsley

  11. Gently mix through

  12. If using the pine nuts and extra Parmesan sprinkle them on top and serve

  13. Enjoy!
