South Indian Style Chokha Baingan
Ingredients

- quinoa pongal .
- 3/4 cup quinoa
- 1/4 teaspoon turmeric
- 4-5 green chillies
- 8 peppercorns crushed
- 1 inch ginger grated
- 8-10 cashews roughly chopped
- few curry leaves
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds.
- roasted eggplant gojju
- roast an eggplant on an open flame ? ,peel, mash and set aside.
Preparation
In a pressure cooker dry roast the lentils until fragrant, add washed quinoa, pinch of hing, sliced green chillies, salt , few cumin seeds and 3 cups of water and pressure cook
Temper this with mustard, cumin, hing, crushed pepper, cashews, curry leaves, grated ginger
Add the tempering to the pongal adjust the salt add water to adjust to required consistency . Enjoy
