Spaghetti with No Meat Sauce and Meatless Meatballs

Ingredients

  • 4 Cloves of Garlic
  • 1 package of Beyond Burgers
  • Grapeseed Oil
  • Can of Organic Mushrooms
  • 2 Bay Leaves
  • 1/3 cup Red Lentils
  • Red Chili Flakes
  • Amino Acids
  • Vegan Worcestershire Sauce
  • Garlic Powder
  • Onion Powder
  • Dried Oregano
  • Dried Thyme
  • Salt & Pepper
  • Pkg. Chopped Tomatoes
  • Pkg. Diced Tomatoes
  • Chopped Parsley

Preparation

  1. Start by seasoning the patties with onion powder, garlic powder , chili flakes, Worcestershire sauce, salt & pepper and form into 8 meatballs

  2. In a large sauté pot cook the meatballs until seared on each side and remove from pan

  3. In the same pot add oil and sauté onions and garlic

  4. Add mushrooms and tomatoes and season with salt, pepper, oregano, thyme and Braggs. Add Lentils, Bay Leaves and chopped Parsley. Cover and let simmer

  5. The red lentils cook down easily and provide a “meaty” texture

  6. Once the lentils have cooked down a bit you can add the meatballs to the sauce, cover and cook for about 25 minutes

  7. Cook any type of pasta you prefer. I used Bucatini

  8. Topped with freshly grated @violifeamerica Prosociano Wedge (its salty and buttery just like Parmesan)
