Breaded Tofu Fillet with Polenta Chips

Ingredients

  • 150g polenta block
  • paprika
  • cayenne pepper
  • garlic powder
  • onion powder
  • 80g firm tofu
  • 1 slice bread
  • 10ml soy sauce or tamari or coconut aminos
  • 10g flour
  • 1 tablespoon tomato purée
  • smoked paprika
  • black pepper

Preparation

  1. Preheat oven to 180°C

  2. Cut the polenta block into wedges and season with paprika, cayenne pepper, garlic powder, and onion powder.

  3. Place the seasoned polenta wedges on a baking tray lined with baking paper and bake for 15 minutes.

  4. Dip the tofu in soy sauce, then in flour, repeating the process until fully coated.

  5. Coat the tofu with breadcrumbs made from a toasted and blended slice of bread.

  6. Place the breaded tofu on a baking tray lined with baking paper and bake for 15-20 minutes at 180°C.

  7. For the dip, mix tomato purée with cayenne pepper, smoked paprika, and black pepper.

  8. Prepare peas by steaming or boiling until tender

  9. Serve the breaded tofu, polenta chips, peas, and spicy dip together
