Jungle Curry of Fried Tofu

Ingredients

  • 200g fried tofu
  • 1 cup of vegetable stock
  • 1 tbs light soy sauce⁣
  • 0.5 tsp white sugar⁣
  • 2 tbs finely chopped coriander⁣
  • 1 tbs fried shallots
  • 10-15 green bird's eye chillies
  • large pinch of salt⁣
  • 1 tbs chopped galangal
  • 2 tbs chopped lemongrass⁣
  • 1 tsp lime finely chopped lime zest⁣
  • 2 tsp finely chopped coriander stem⁣
  • 3 tbs chopped red shallot⁣
  • 2 tbs chopped garlic⁣
  • 1 tsp shrimp paste substitute of choice
  • 2 garlic cloves, chopped⁣
  • pinch of salt⁣
  • 3 birds eye chillies⁣

Preparation

  1. Make curry paste by pounding or blending ingredients together in a mortar and pestle or blender. Set aside. Do the same to make the garlic paste

  2. Heat a pot over medium-high heat then add about 1 tbs oil

  3. Stir fry garlic paste for 1 min

  4. Then add curry paste

  5. Stiry fry for about 3 minutes. Add sugar, soy sauce and stock

  6. Bring liquid to a boil, add tofu. Let simmer for 2 minutes

  7. Sprinkle with coriander and fried shallot. Serve with white rice
