Speedy Fresh Breakfast Bowl
Ingredients
- Drizzle of olive oil
- 100g mushrooms, chopped
- 50g tofu
- Large handful of spinach
- Small handful of fresh parsley, chopped
- 1/4 tsp turmeric
- 1/4 tsp smoked paprika
- 1 tsp garlic granules
- 1/2 tsp onion granules
- 2 tbsp nutritional yeast
- 2 tsp lemon juice
- 2 slices vegan bacon
- Salt and pepper to taste
Preparation
Drizzle a little olive oil in a non-stick pan over medium heat. Add the mushrooms and crumble in the tofu. Allow them to cook for about 3 minutes.
Add turmeric, garlic granules, onion granules, paprika, nutritional yeast, lemon juice, salt, and pepper to the pan. Mix everything together.
Add the spinach to the pan and stir.
On a spare side of the pan, add the vegan bacon and cook on each side.
Give everything a good mix and serve immediately.
