Speedy Fresh Breakfast Bowl

Ingredients

  • Drizzle of olive oil
  • 100g mushrooms, chopped
  • 50g tofu
  • Large handful of spinach
  • Small handful of fresh parsley, chopped
  • 1/4 tsp turmeric
  • 1/4 tsp smoked paprika
  • 1 tsp garlic granules
  • 1/2 tsp onion granules
  • 2 tbsp nutritional yeast
  • 2 tsp lemon juice
  • 2 slices vegan bacon
  • Salt and pepper to taste

Preparation

  1. Drizzle a little olive oil in a non-stick pan over medium heat. Add the mushrooms and crumble in the tofu. Allow them to cook for about 3 minutes.

  2. Add turmeric, garlic granules, onion granules, paprika, nutritional yeast, lemon juice, salt, and pepper to the pan. Mix everything together.

  3. Add the spinach to the pan and stir.

  4. On a spare side of the pan, add the vegan bacon and cook on each side.

  5. Give everything a good mix and serve immediately.
