Tofu Tikka Masala
Ingredients
- 1 block (400g) extra firm tofu, pressed and cubed⠀
- 1/2 cup yogurt or full-fat coconut milk⠀
- 1 tsp each: ground coriander, cumin, garam masala, turmeric, paprika⠀
- 1/2 tsp sea salt⠀
- 1 large onion, diced (250g)⠀
- 5 cloves garlic, minced⠀
- 2 tbsp ginger, minced⠀
- 1/2 tsp cinnamon⠀
- 1/2 tsp coriander⠀
- 1 tsp garam masala⠀
- 2 tsp curry powder⠀
- 1 tsp red chili flakes⠀
- 1/2 tsp sea salt⠀
- 2 large ripe tomatoes, pureed (400g)⠀
- 1 cup full-fat coconut milk⠀
- 3-4 cups chopped veggies ⠀
- 1 tsp maple syrup⠀
Preparation
Combine the coconut milk, spices, and salt in a shallow dish. Add in tofu cubes and coat evenly, then set aside for 15 minutes.⠀
In a large pot, sauté the onion, garlic, and ginger with oil/water
After 5 minutes, add in the spices, salt, and tomatoes
Incorporate well, then mix in veggies and marinated tofu
Cover and simmer on low heat; once veggies are almost tender, about 8 min, stir in coconut milk and maple syrup, and cook for another 5 minutes
Serve warm
