Tofu Tikka Masala

Ingredients

  • 1 block (400g) extra firm tofu, pressed and cubed⠀
  • 1/2 cup yogurt or full-fat coconut milk⠀
  • 1 tsp each: ground coriander, cumin, garam masala, turmeric, paprika⠀
  • 1/2 tsp sea salt⠀
  • 1 large onion, diced (250g)⠀
  • 5 cloves garlic, minced⠀
  • 2 tbsp ginger, minced⠀
  • 1/2 tsp cinnamon⠀
  • 1/2 tsp coriander⠀
  • 1 tsp garam masala⠀
  • 2 tsp curry powder⠀
  • 1 tsp red chili flakes⠀
  • 1/2 tsp sea salt⠀
  • 2 large ripe tomatoes, pureed (400g)⠀
  • 1 cup full-fat coconut milk⠀
  • 3-4 cups chopped veggies ⠀
  • 1 tsp maple syrup⠀

Preparation

  1. Combine the coconut milk, spices, and salt in a shallow dish. Add in tofu cubes and coat evenly, then set aside for 15 minutes.⠀

  2. In a large pot, sauté the onion, garlic, and ginger with oil/water

  3. After 5 minutes, add in the spices, salt, and tomatoes

  4. Incorporate well, then mix in veggies and marinated tofu

  5. Cover and simmer on low heat; once veggies are almost tender, about 8 min, stir in coconut milk and maple syrup, and cook for another 5 minutes

  6. Serve warm
