Crispy Parmesan Baked Potatoes
Ingredients
- 1 lb small potatoes
- 1/4 cup + 2 tbsp olive oil
- 1 cup parmesan cheese
- Sea salt & pepper
Preparation
Preheat oven to 415 degrees.
Slice potatoes in half lengthwise.
Score each potato half by making 3 strips down and 3 across.
Line a baking sheet with parchment paper or use a deep baking dish.
Add 1/4 cup olive oil and spread it to cover the dish.
Add Parmesan cheese and evenly spread it across the bottom.
Add potatoes cut side down closely next to each other.
Drizzle with the remaining oil and bake for 40-45 minutes until tops are crispy.
