Crunchy Slaw with Tangy Lemon Cumin Dressing

Ingredients

  • 1 small head red cabbage, cored quartered and thinly sliced
  • 1/4 cup chopped fresh parsley
  • 5 scallions, thinly sliced
  • 1/2 tablespoon cumin
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 1/4 cup white vinegar
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon ground sumac (optional)

Preparation

  1. Prepare the vegetables by coring, quartering, and thinly slicing the red cabbage, chopping the parsley, and slicing the scallions.

  2. In a small bowl, combine cumin, salt, olive oil, white vinegar, and lemon juice to make the dressing.

  3. Toss the vegetables with the dressing until well coated. Add sumac if using.

No oil option

  1. Massage the shredded cabbage for 10 minutes until wilted, then season with cumin, salt, and other desired seasonings.
