Healthy Monster Pancakes with Oat Flour

Ingredients

  • 1 cup oat flour
  • 1 egg or 1 tablespoon flaxseed soaked in water until gel-like for vegan option
  • 1 cup plant-based milk (unsweetened almond milk recommended)
  • 1 whole apple
  • 1/2 teaspoon cinnamon powder

Preparation

  1. Soak flaxseed in water until it forms a gel-like consistency if using vegan option

  2. Grate the apple into small pieces

  3. In a bowl, mix oat flour and cinnamon powder together

  4. In another bowl, whisk the egg or add the soaked flaxseed mixture

  5. Add plant-based milk and grated apple to the wet ingredients and stir to combine

  6. Combine the wet and dry ingredients to form a batter, mixing until smooth

  7. Heat a pancake pan or griddle over medium heat and lightly grease if necessary

  8. Pour batter onto the pan to form pancakes and cook until bubbles form on the surface, then flip and cook the other side until golden brown
