Banana Bread Pancakes with Bananas and Jam

Ingredients

  • 1 ripe banana
  • 1 egg or 1 flax egg
  • 2 tablespoons oat flour
  • 1 teaspoon chia seeds
  • pinch of baking powder

Toppings

  • banana slices
  • jam (blueberry)
  • bee pollen
  • chia seeds

Preparation

  1. Mash the banana with a fork

  2. Beat the egg and mix all ingredients except the garnishes

  3. Heat a non-stick pan and pour the batter using a spoon to form pancakes; you can add a small amount of coconut oil if desired

  4. Cook each side for 1 minute until golden-brown

  5. Stack the pancakes and add banana slices, jam, bee pollen, and sprinkle more chia seeds
