Banana Bread Pancakes with Cream Cheese and Bananas

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg or 1 flax egg
  • 80 g oat flour
  • 100 g dragon fruit puree
  • pinch of baking powder

Toppings

  • banana slices
  • cream cheese (dairy or dairy free)
  • bee pollen
  • sunflower seeds

Preparation

  1. Mash the banana with a fork.

  2. Beat the egg.

  3. Defrost the puree if you're using frozen.

  4. Mix all of the ingredients except for the garnishes.

  5. Heat a non-stick pan and using a spoon pour the batter to form pancakes, and you can add a tiny amount of coconut oil if you want to fry them.

  6. Bake each side for 1 minute until they turn golden-brown.

  7. Caramelise your banana slices by simply frying them a little in some coconut oil on both sides.

  8. After making the stack of pancakes, add the cream cheese, the caramelised banana slices, the seeds and the bee pollen.
