Banana Bread Pancakes with Cream Cheese and Bananas
Ingredients
- 1 ripe banana (mashed)
- 1 egg or 1 flax egg
- 80 g oat flour
- 100 g dragon fruit puree
- pinch of baking powder
Toppings
- banana slices
- cream cheese (dairy or dairy free)
- bee pollen
- sunflower seeds
Preparation
Mash the banana with a fork.
Beat the egg.
Defrost the puree if you're using frozen.
Mix all of the ingredients except for the garnishes.
Heat a non-stick pan and using a spoon pour the batter to form pancakes, and you can add a tiny amount of coconut oil if you want to fry them.
Bake each side for 1 minute until they turn golden-brown.
Caramelise your banana slices by simply frying them a little in some coconut oil on both sides.
After making the stack of pancakes, add the cream cheese, the caramelised banana slices, the seeds and the bee pollen.
