Gluten-Free Cinnamon Oat Flour Pancakes
Ingredients
- 2 cups oat flour - I use Bob's Red Mill
- 1 egg (or chia egg or flaxseed egg for vegan pancakes)
- 1/2 cup 15min Mom almond milk (add according to consistency desired)
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract (can use essence as well)
- 1 teaspoon cinnamon powder
- 1 teaspoon vinegar
- pinch of salt
- optional: ground almonds, ground walnuts, 1 tablespoon each
Preparation
Blend all wet ingredients in a NutriBullet or similar blender.
Add the wet ingredients to the dry ingredients and whisk until combined.
If you like your pancakes sweet, add agave syrup or coconut sugar to the batter, or drizzle maple syrup over the top after cooking.
Tips
Can be made vegan by using a chia egg or flaxseed egg instead of a regular egg; message if you don’t know how to make one.
Top with agave syrup, raw unsalted pistachios, coconut flakes, and pomegranate for added flavor.
