Vegan Gluten-Free Oat Pancakes

Ingredients

  • 300 g oat flour
  • 1 tsp baking powder
  • 1 tsp almond flour (from @govindanatur)
  • 1/3 tsp vanilla extract
  • pinch of salt
  • 1 tsp agave juice
  • 250 ml plant milk
  • 1 tbsp coconut oil
  • 1 tsp lemon juice
  • a little bit lemon zest

Preparation

  1. Mix the dry ingredients together in a large bowl

  2. In a separate bowl, combine the wet ingredients

  3. Gradually add the wet mixture to the dry ingredients and stir until just combined, avoiding overmixing

  4. Heat a non-stick skillet or griddle over medium heat and add a portion of the coconut oil

  5. Pour batter onto the skillet to form pancakes and cook until bubbles appear on the surface, then flip and cook the other side until golden brown

  6. Repeat with remaining batter, adding more oil as needed
