Quick Vegan Meal

Ingredients

  • 1/4 cup coconut milk (full fat)⁠
  • 1 1/2 tbsp soy sauce⁠
  • 1 tbsp lime juice⁠
  • 1/2 tbsp maple syrup⁠
  • 2 tsp sambal olek⁠

Preparation

  1. Whisk to combine the sauce in a bowl, set aside.⁠

  2. Cook tofu and garlic in a pan with water or sesame oil.⁠

  3. Add rest of the veggies and the sauce, let simmer for 2-3 minutes.⁠

  4. Add in whole wheat noodles, stir to combine and SERVE! ?⁠
