Chopped Peanuts on a Bed of Brown Rice

Ingredients

  • 1 heaping tbsp creamy peanut butter
  • 1 tbsp rice vinegar
  • 2 tbsp tamari
  • 2 tsp sesame oil
  • 1 tsp maple syrup

Preparation

  1. Stir fry veggies of choice until tender

  2. Add in baked (or in my case pre made) tofu

  3. Add sauce and toss to combine

  4. Serve over brown rice and top with toasted peanuts and a squeeze of lime juice
