Veg and Cheese Quinoa Cakes

Ingredients

  • 150g cheddar, grated
  • 1 large handful frozen peas
  • 200g cooked quinoa
  • drizzle some olive oil in a pan and sauté the onion, carrot and broccoli for 5 mins. season with black pepper.

Preparation

  1. Drizzle some olive oil in a pan and sauté the onion, carrot and broccoli for 5 mins. Season with black pepper

  2. In a large bowl, whisk the eggs, then stir in the cheese, frozen peas, quinoa, and cooked veg

  3. Using a 1/4 cup or small ramekin dish, scoop out some of the mixture, pack it down, then gently tip on to the baking tray. Repeat with all the mixture

  4. Bake for 10 mins then gently turn and bake for another 5-10 mins. Allow to cool then serve
