Cauliflower Macaroni Cheeze

Ingredients

  • 1 small cauliflower, cut into florets
  • 200 g/7 oz Marconi pasta
  • 2 quantities cheese sauce
  • cheeze sauce
  • 250 ml8 fl oz water
  • 130 g/4 1/2 oz (cashews nuts) if allergic to nuts swapped nuts for chickpeas
  • 1 tsp lemon juice
  • 2 spring onions chopped
  • 2 tbsp nutritional yeast flakes
  • 1/4 tsp salt

Preparation

  1. Preheat the oven to 180°C/350°F/Gas Mark 4

  2. Cook the macaroni in pan of boiling water according to the packet instructions

  3. Meanwhile prepare the cheese sauce

  4. Once everything is ready. Mix them together, then transfer to a baking dish and bake for 30-40 minutes until browned. Serve with bread or potatoes

  5. Blend all the ingredients until smooth, then gently heat in a pan until thick and creamy

  6. This simple dairy-free cheeze sauce can be poured over steamed vegetables and rice, or stirred through pasta or served as a dip with oven rainbow oven fries
