Fluffy Blueberry Poppy Seed Pancakes
Ingredients
- 100g flour
- 20g coconut flour
- 1 tbsp baking powder
- 2 tbsp coconut blossom sugar
- 1 tbsp poppyseed
- 100ml soy milk
- 100-150ml sparkling water
- Blueberries
Preparation
Mix the dry ingredients together.
Add soy milk and sparkling water (adjust amount for desired consistency) and mix well.
Leave the dough to rest for 10 minutes.
Fold in the blueberries.
Cook on medium heat on both sides until golden brown.
