Mom's Special Vegan Christmas Cookies

Ingredients

  • 250g whole grain flour
  • 150g walnuts (grated)
  • 200g vegan butter
  • 100g powdered sugar
  • 1 egg alternative (1 Tbsp. ground flax seeds + 3 Tbsp. water)

Preparation

  1. Mix all the ingredients together into a dough.

  2. Place it into a bowl and let it in a fridge for 1 hour.

  3. Take it outside and gently cut the dough into 4 even pieces.

  4. Take one piece and roll it into a ball shape using your hands. You don’t have to knead it much.

  5. Roll out the dough on a lightly floured flat work surface to about 1/2 cm thickness.

  6. Use cookie cutters to create desired shapes, and carefully transfer to a nonstick baking sheet, placing the cookies about 1 cm apart.

  7. Bake them for 7-8 minutes at 360 degrees (180 C).

  8. Take the cookies out of the oven and sprinkle or cover them with a vanilla sugar. The sugar sticks on the cookies better when they are hot right from the oven.
