Chocolate Chip Walnut Cookies
Ingredients
- 1 cup melted vegan butter
- 3/4 cup organic brown sugar
- 1/3 cup organic cane sugar
- 2 1/2 cups all purpose flour
- 1 teaspoon salt
- 1/2 tablespoon baking powder
- Egg Replacer or flax eggs (equivalent to two large eggs)
- 1.5 teaspoon vanilla extract
- 1.5 cups semi-sweet vegan chocolate chip
- 1/2 cup chopped walnuts
Preparation
Whisk melted butter, both kinds of sugar, and vanilla extract until well combined. Combine in your "eggs" and whisk. Set aside.
In a separate large mixing bowl, whisk together the dry ingredients such as flour, salt, and baking powder.
Combine the liquid mixture little by little to the dry ingredients and mix with a spatula until a sticky dough consistency is achieved.
Fold in the chocolate chips and walnuts. Form the dough into a giant ball and chill in the fridge for 30-45 minutes.
Scoop the chilled dough (about 1/4 cup each), roll into balls, and place on a parchment-lined baking tray. This should yield about 14-16 cookies.
Bake at 375°F for 14 minutes until golden brown all around but still tender in the center.
Place on a cooling rack and enjoy.
