Chocolate Chip Walnut Cookies

Ingredients

  • 1 cup melted vegan butter
  • 3/4 cup organic brown sugar
  • 1/3 cup organic cane sugar
  • 2 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 1/2 tablespoon baking powder
  • Egg Replacer or flax eggs (equivalent to two large eggs)
  • 1.5 teaspoon vanilla extract
  • 1.5 cups semi-sweet vegan chocolate chip
  • 1/2 cup chopped walnuts

Preparation

  1. Whisk melted butter, both kinds of sugar, and vanilla extract until well combined. Combine in your "eggs" and whisk. Set aside.

  2. In a separate large mixing bowl, whisk together the dry ingredients such as flour, salt, and baking powder.

  3. Combine the liquid mixture little by little to the dry ingredients and mix with a spatula until a sticky dough consistency is achieved.

  4. Fold in the chocolate chips and walnuts. Form the dough into a giant ball and chill in the fridge for 30-45 minutes.

  5. Scoop the chilled dough (about 1/4 cup each), roll into balls, and place on a parchment-lined baking tray. This should yield about 14-16 cookies.

  6. Bake at 375°F for 14 minutes until golden brown all around but still tender in the center.

  7. Place on a cooling rack and enjoy.
