Chocolate Chip Cookies
Ingredients
- 6 tablespoons vegan butter, softened
- 7 tablespoons granulated sugar
- 6 tablespoons light brown sugar
- 1 vegan egg
- 3/4 cup brown rice flour
- 1/2 teaspoon baking soda
- 1 tablespoon cocoa powder
- 3 ounces gluten-free dark, dairy-free sweet chocolate chips
Preparation
Preheat the oven 350°f
Pace all the ingredients except the chocolate chips in a food processor and whiz until smooth, or beat together in a large bowl
Stir in the chocolate chips, and bring the mixture together with your hands to form a ball
On a surface dusted lightly with rice flour, divide the mixture into 20 balls, then place them on baking sheets, well spaced apart, pressing down gently with the back of a fork
Place in the preheated oven for 8-10 minutes
Remove the cookies from the oven, let stand for a few minutes to harden, then transfer to a wire rack to cool
