Chocolate Chip Cookies

Ingredients

  • 6 tablespoons vegan butter, softened
  • 7 tablespoons granulated sugar
  • 6 tablespoons light brown sugar
  • 1 vegan egg
  • 3/4 cup brown rice flour
  • 1/2 teaspoon baking soda
  • 1 tablespoon cocoa powder
  • 3 ounces gluten-free dark, dairy-free sweet chocolate chips

Preparation

  1. Preheat the oven 350°f

  2. Pace all the ingredients except the chocolate chips in a food processor and whiz until smooth, or beat together in a large bowl

  3. Stir in the chocolate chips, and bring the mixture together with your hands to form a ball

  4. On a surface dusted lightly with rice flour, divide the mixture into 20 balls, then place them on baking sheets, well spaced apart, pressing down gently with the back of a fork

  5. Place in the preheated oven for 8-10 minutes

  6. Remove the cookies from the oven, let stand for a few minutes to harden, then transfer to a wire rack to cool
