No-Bake Carrot Cake Bars

Ingredients

Bars

  • 2 cups coconut flour
  • 1/4 cup granulated sweetener of choice
  • 1/4 cup unsweetened applesauce
  • 1/4 cup grated carrots
  • 1/4 cup pure maple syrup
  • 1/4 cup natural almond butter
  • dash vanilla extract
  • 1/2 cup unsweetened almond milk

Frosting

  • 1/2 cup coconut butter, melted
  • 2 tbsp coconut oil, melted
  • 1 tsp maple syrup

Preparation

  1. Line a loaf pan with parchment paper and set aside

  2. In a large mixing bowl, combine dry ingredients; once fully combined, add in applesauce and shredded carrots

  3. On the stovetop, melt almond butter and maple syrup; whisk in vanilla extract and pour into the dry mixture

  4. Mix well, then add milk; stir until fully incorporated

  5. Transfer to the loaf pan and press firmly into place. Refrigerate for 10 minutes

  6. Make the frosting and pour on top, then set back into the fridge for at least 30 minutes before cutting
